Irish Culture

Hi, I'm an American Writer and recently I've decided to try to create some multicultural characters. I'm trying to write an Irish characters perspective, but I don't feel like I know enough about Irish culture/customs/social structure to do it justice and not offend anyone with inaccurate stereotypes. So I was hoping to learn a bit about life in Ireland . Any information at all is much appreciated from local foods to common held beliefs, ways of talking, and anything else. Thank you for your time.
