Hola aneta,
it is very nice to live on the Canary Islands, especially the climate is unbeatable.
However, at present it is very difficult to find a Job. It is difficult to answer your general question about cost of living etc., since individual needs may differ widely. If You are keen driver, you can enjoy the cheap gasoline. In the touristic hotspots You may pay for e coffee 2 Euros and more. In a local place nearby the coffe is prably sold at 50 cents etc..As rule of thumb You should have as a single person min. 1000 Euros/month net to survive.
